The base of this delicacy is in the natural juice of the clams, which becomes the soul of the preparation. After opening the can and reserving the juice, its essence is enhanced with a spoonful of lemon miso, an ingredient that provides depth and an irresistible citrus touch. Then, xanthan is added to achieve a soft and velvety texture, ideal for enveloping each clam with a blanket of flavor.
 
The emulsion process is key: everything is mixed in a blender until a uniform and shiny sauce is obtained. The clams, elegantly presented on a plate, are bathed in this sauce, allowing each bite to be an explosion of freshness and sophistication. Finally, a fresh lemon zest adds a vibrant aroma that finishes the experience masterfully.
  1. Open the can of Japanese Clams from A Mar Espectacular
  2. Reserve the clam juice for later use
  3. Add a tablespoon of Lemon Miso to the clam juice
  4. Add Xanthan to give it texture
  5. Place in a blender and blend until perfectly emulsified
  6. Place the Japanese clams on a plate
  7. Sprinkle the Japanese clams with the sauce we have prepared
  8. To finish, grate a lemon over the sauce
