“SIROCO” Recipe. Gildas Gordal

Authentic and unique flavours! Today we enjoyed a creation by chef Paco Pérez with Gordal olives stuffed with piparra, bathed in a delicious sauce made with Gordal olive water and a special touch of anchovy olive, all thanks to the quality of A Mar Espectacular.

Each bite is a perfect balance between fresh, spicy and umami. An explosion of Mediterranean flavours that will take you to the coast. Ideal to surprise at your meetings! 🌊🫒✨

  1. Separate the liquid from the “A Mar” olives and put it in a container
  2. Add Xanthan to give it texture
  3. Add anchovy oil
  4. Place everything in a blender and blend until well emulsified
  5. Take the gordal olive and pass the piparra through the holes
  6. Finally, sprinkle the sauce over the gildas that we have prepared with the piparras and olives
  7. Add a little olive oil
